Foxhole Farm Winter Harvest Supper

Join Chef Sam Wickham of local Foxhole Farm as she takes you to her supper table. You'll enjoy the bounty of harvest — winter style. Start off with Crostinis made from Foxhole Farmhouse Sourdough Bread and topped with Homemade Fluffy Ricotta and Local Honey. Sam will show you some of winter's best ingredients as you dine your way through a Creamy Kohlrabi and Cress Salad, and into a family meal of Warped Wing Oatmeal Stout Braised Lamb Shanks, Pearl Couscous, Local Winter Squash, and Gremolata. No one leaves the farm table without a bite of something sweet, so sit tight for local Apples Foster, a dish that makes the most of the season and is surprisingly simple to recreate at home. This menu will be paired with wine.

About Chef Sam Wickham

Sam grew up in Washington Township and upon high school graduation, moved to Hyde Park to attend the CIA, where she graduated in 2011. Having been nestled in the rich local food scene of the Hudson Valley, she became excited about growing food and working with the land. Sam started a livestock apprenticeship at the Stone Barns Center for Food and Agriculture, while working part time at Blue Hill Restaurant, where she met her husband, Rich. The couple spent the next three years working for other farmers, learning skills in the animal husbandry, organic vegetable production, mushroom cultivation and raw milk dairy. The couple moved back to Dayton in the fall of 2016 and in 2018 they found their piece of land in Brookville! (Foxhole Farm). Sam teaches cooking classes at the Learning Center in Hamilton, as well as running Farmer to Table, her in-home private cheffing gig. Foxhole Farm is is the couples' full-time venture where they grown food for the good folks of Dayton!
