An artisanal cows' milk cheese cheese from the Trentino region in northern Italy, this soft cheese is aged for over 60 days in the cellars of Rifugio Crucolo, at the entrance of Val Campelle, Trento. This unique environment gives the cheese its particular taste and rich aroma. We were lucky enough to visit this cheese maker, giving us new respect for this mild yet complex selection.
