This French vinegar is made from Banyuls wine which is a famous port-like wine with a French AOC dating back centuries in the southeastern part of France on the Spain border. The wine of Banyuls is made of 3 grapes: Grenache Noir, Grenache Gris, and Carignan. After pressing and vinification, the wine transfer from its ritualistic barrel sequence for five years under varying conditions. During the fifth year, the wine gets a jump-start from an older ancestor - a 20% solution of Vieux Vinaigre de Banyuls - and it spends another 6 months to 2 years in another barrel in a cool cellar before it is filtered and bottled as Le Vinaigre de Banyuls. The result? One of the best vinegars in the world. It is one of our personal favorites here at DLM. Combine it with Edmond Fallot Mustard and Vera Jane's Extra-Virgin Olive Oil and you have the best salad dressing ever.

This small production vinegar is made from the naturally sweet wine of Banyuls, with a grape base of 50% Grenache Noir, 40% Grenache Gris, 10% Carignan. It has been barrel-aged for six years to develop nuanced flavor and an excellent balance of sweet and tart. Vinegar of Banyuls adds fantastic depth of flavor to any food. With its hint of residual sugar and the six years it spends in oak casks, it elevates any dish.
