It starts with Heirloom Kurobuta pork, a rare heritage breed whose roots trace back to 18th-century England, when farmers crossed their hogs with prized black pigs from Asia. Renowned for its rich marbling and tenderness, Kurobuta literally meaning “black pig” in Japanese and remains one of the world’s most celebrated pork varieties.
The Kurobuta hogs for Black Apple Ham are GAP Certified and raised by small family farms across the Ozarks, Illinois, and Iowa. Their care and attention result in a juicy, flavorful ham that’s perfect for holiday entertaining.
Smoking Goose takes it one step further with a glaze made from Laird’s Applejack, America’s first native spirit. The Laird family has distilled Applejack since 1698. So iconic, George Washington once requested their recipe and Abraham Lincoln served it in his Illinois tavern. That legacy of craftsmanship lives on in every bite.
