Temperature and Curling

  • Contrary to most cheeses that you want to bring to room temperature before eating, Tête de Moine should be curled while it is cold, straight from the refrigerator.
  • Ease of Curling: It is much easier to shave the cheese when it is chilled. The structure of the paste is firmer, allowing the blade of the girolle (the scraping device) to create thin, crisp "rosettes."
  • The Warmth Factor: If the cheese is warm, the paste becomes soft and buttery. Instead of shaving off into elegant curls, the blade will likely "smear" the cheese or cause it to tear and clump.
