Using a pan that a few pieces of cod fillets can snuggly fit in, add rice vinegar, soy sauce, and water. Add chopped fresh ginger to the pan.

Season the fish fillets generously with salt and pepper and place in skillet. Bring up to a boil, then cover and simmer until fish is cooked through, about 5-8 minutes.

Garnish with julienned green onion and a little chili crunch for heat.
