Bacon Flank Steak Pinwheel With Andouille Sauce

INGREDIENTS

  • 4 DLM Flank Steak Pinwheels
  • ½ cup DLM Uncured Peppered Bacon, diced
  • 1 cup Andouille sausage, diced
  • ½ cup celery, diced
  • ½ cup onion, diced
  • ½ cup green pepper, diced
  • ½ cup sliced mushrooms
  • ½ cup butter, melted
  • ½ cup flour
  • 1 tsp salt
  • 1 tsp cumin
  • 1 Tbsp Cajun seasoning
  • 1 tsp filé powder
  • 1 cup beef stock
  • 2 Tbsp tomato paste, or more to taste

INSTRUCTIONS

Pan-sear DLM Flank Steak Pinwheel. Place in oven at 375°F till desired doneness, approximately 20-25 minutes for medium.

While steak is cooking, add bacon to a medium saucepan and sauté until crisp.

Add Andouille sausage, celery, onion, green pepper, and mushrooms, and sauté till onions are clear.

Add butter and melt until the butter is golden brown. Remove from heat and add flour.

Bring back to heat and cook thoroughly. Add salt, cumin, cajun seasoning, file powder, and stock. Stir and bring to a boil. Reduce to a simmer and add tomato paste. Simmer sauce until pinwheels are ready to serve. Pour sauce over roast.
