Cut the bok choy in half lengthwise and carefully wash. Drain well and pat dry.

In a large sauté pan, heat the oil and add the bok choy, cut side down. Cook until well browned, about 5 to 6 minutes. Remove from pan.

Lower the heat to medium and add the garlic and ginger sautéing briefly. Add the water and the vinegar and scrape up any browned bits. Mix in the soy sauce and brown sugar until combined. Add the bok choy back in and braise over low heat for 10 minutes or until the stems are tender.

Garnish dish with toasted sesame and fresh chives. Excellent with hot cooked rice.
