Butter Braised Carrots

INGREDIENTS

  • 2 lbs rainbow carrots, peeled
  • 4 Tbsp butter
  • ¼ cup water
  • Salt and pepper to taste
  • 2 Tbsp fresh herbs, like mint, parsley, or dill, chopped
  • Lemon

INSTRUCTIONS

Place carrots, butter, and water in a small to medium sauté pan. Season to taste with salt and pepper. Bring to a boil, cover, and let braise over very low heat until carrots are tender and liquid is almost gone, about 20 to 25 minutes.

For serving, garnish with fresh herbs and a squeeze of fresh lemon.
