Preheat oven to 450ºF. Trim both ends of each delicata squash. Stand one squash on the larger size and slice it lengthwise through the center creating two even halves. Scrape out and discard seeds and any fibrous flesh. Repeat with second squash.

Place halves cut-side down on a cutting board. Cut each squash half crosswise into 1-inch thick slices and place in a large bowl. Add the melted butter and season to taste with the salt and pepper, mixing well.

Space them out evenly on a baking sheet and roast until squash slices are golden brown on the bottom, about 10 to 12 minutes. Flip them over and continue to roast another 8 to 10 minutes.
