Crush cookies; stir in 7 tablespoons of melted butter until crumbs are well-moistened. Press firmly onto bottom and up sides of 10” cheesecake pan.

In mixing bowl, beat together cream cheese and sugar. Add eggs and mix.

Melt chocolate chips and 2 remaining tablespoons butter in microwave. (Put in microwave for about 1 minute and then stir. Do not over melt.)

Combine cream cheese and chocolate mixtures.

Add whipping cream and vanilla and beat until incorporated and smooth. Pour mixture into crust-lined pan.

Bake 15 minutes at 350°F. Reduce heat to 325°F and bake another 30-40 minutes or until sides of cheesecake are firm to the touch. Middle will still be “wiggly”.

Cool to room temperature on a wire rack.

Chill in pan in refrigerator overnight. Serve with whipped cream.
