haricot verts (thin green beans)

small yellow potatoes

bay leaf

DLM Dijon Vinaigrette
Handful of fresh herbs like chives, parsley, basil
Salt and pepper to taste
INSTRUCTIONS

In a large pot of boiling salted water, blanch the green beans until just crisp. Remove with a slotted spoon and immediately plunge into cold water to cool. Drain and set aside.

Bring salted water back to a boil and add the potatoes and bay leaf. Simmer until potatoes are firm but pierced easily with a skewer, about 25-30 minutes. Drain and discard bay leaf.

When potatoes have cooled off enough to handle, slice into coins and place in a large salad bowl.

Add the DLM Dijon Dressing and toss to coat, letting potatoes cool off completely in dressing.

Add the green beans and herbs. Toss well, seasoning generously to taste with salt and pepper.
