For the poppy seed vinaigrette: In a medium sized mixing bowl, combine the vinegar, poppy seeds, red onion, garlic, mustard, salt, sugar, and pepper. Slowly drizzle in the oil while whisking to emulsify.

For the salad: Wash and thoroughly dry the lettuce and parsley. Break leaves into pieces. Peel and section the grapefruit.

Mix the lettuce, parsley, nuts, and cheese in a large bowl and season with salt and pepper. Before serving, peel and dice the avocado into large chunks. Add a couple tablespoons of the Poppy Seed Vinaigrette and toss lightly. Add the grapefruit sections on top. Drizzle grapefruit with a bit more vinaigrette and serve. You will have extra dressing for another salad.
