INSTRUCTIONS

Preheat your broiler to high.

Place tomatillos on a foil-lined sheet tray and broil on the highest rack closest to the heat. Let char for about 2 minutes and then turn and broil the other side until well charred. Remove from oven.

In a food processor or blender, add the charred tomatillos (and any accumulated juice), peppers, onions, cilantro, and ¼ cup of water. Pulse or blend until it becomes a coarse purée.

Season to taste with salt and pepper, adding more water if needed.

Let sit for at least an hour before serving so flavors can develop.
