Rub roast with Vera Jane's Extra-Virgin Olive Oil and season generously with salt and pepper or DLM Grilling & Seasoning Rub.

Preheat oven to 500°F. Place roast in a roasting pan and cook in the oven for 15 minutes.

Reduce heat to 375°F and continue roasting 20 to 30 minutes or until an internal temperature of 125°F for rare; 130°F for medium-rare; 140°F for medium.

Allow the roast to rest 10 minutes before slicing.
