INGREDIENTS

  • 4 salmon fillets (4 to 6 oz each)
  • Salt and black pepper to taste
  • 2 Tbsp Vera Jane's Extra-Virgin Olive Oil
  • 2 cups squash, peeled, seeded, and diced
  • 1 cup arugula
  • 2 Tbsp fresh dill, chopped

INSTRUCTIONS

Preheat grill or grill pan to a medium-high heat.

Season salmon fillets with salt, pepper, and olive oil.

Grill 5 to 8 minutes per side, depending on thickness and desired doneness.

On medium heat, grill cubed squash 5 minutes until tender.

Toss arugula with a little olive oil and season with salt and pepper.

Garnish salmon with dill and serve on a bed of squash and arugula salad.
