Seared Lion's Mane Mushroom Salad with Local Tomatoes

INGREDIENTS

large cluster of Lion's Mane mushrooms
DLM Extra-Virgin Olive Oil
6
handfuls of local salad greens
Handful of ripe local tomatoes, diced
Salt and pepper to taste
DLM Homemade House Dijon Vinaigrette for serving
INSTRUCTIONS

Trim off the firmer bottom of the mushroom cluster and tear the rest into bite-sized pieces. Place in a bowl and drizzle with olive; season well with salt and pepper.

In a grill pan or heavy sauté pan, sear the mushrooms over medium-high heat until golden brown. Pressing down lightly with a spatula helps crisp them up. Remove from pan.

When ready to serve, lightly toss the greens and tomatoes with the vinaigrette. Top salad with the prepared mushrooms.
