Seared Lion's Mane Mushroom Salad with Local Tomatoes

INGREDIENTS

  • 1 large cluster of Lion's Mane mushrooms
  • DLM Extra-Virgin Olive Oil
  • 6 handfuls of local salad greens
  • Handful of ripe local tomatoes, diced
  • Salt and pepper to taste
  • DLM Homemade House Dijon Vinaigrette for serving

INSTRUCTIONS

Trim off the firmer bottom of the mushroom cluster and tear the rest into bite-sized pieces. Place in a bowl and drizzle with olive; season well with salt and pepper.

In a grill pan or heavy sauté pan, sear the mushrooms over medium-high heat until golden brown. Pressing down lightly with a spatula helps crisp them up. Remove from pan.

When ready to serve, lightly toss the greens and tomatoes with the vinaigrette. Top salad with the prepared mushrooms.
