INGREDIENTS

  • 2 Tbsp DLM Extra-Virgin Olive Oil
  • ¼ cup onion, finely diced
  • 2 garlic gloves, minced
  • lbs shrimp, peeled and deveined
  • 2 cups diced seeded plum tomatoes
  • ½ cup dry white wine
  • 2 Tbsp chopped mixed herbs, like basil or thyme
  • 1 Tbsp finely chopped fresh flat-leaf parsley
  • 2 Tbsp butter, diced
  • Salt, pepper, and fresh lemon juice to taste

INSTRUCTIONS

Heat the olive oil in a large sauté pan. Add the onion and garlic and cook for one and a half minutes, stirring frequently so no color develops. Add the shrimp and tomatoes and cook for one minute. Turn the shrimp over.

Add the white wine and continue cooking for 2-3 more minutes. Add the herbs and butter; toss to combine. The shrimp should be slightly firm and plump.

Remove from heat and season to taste with salt, pepper, and a splash or two of lemon juice.
