Place eggs in a medium saucepan and cover with cold water. Bring water to a full boil, let cook for 1 minute, and then turn off heat and cover pan. Allow eggs to stand for at least 15 minutes. Once eggs are cool enough to handle, peel and cut in half width-wise.

Scoop yolks into a bowl; place whites on a serving platter. Mash yolks together with a fork and add mayonnaise, tomato paste, vinegar, salt, pepper, and paprika. Mash until mixture is smooth.

Spoon yolk mixture into whites and garnish with a sprig of parsley or dust with paprika.
