INSTRUCTIONS

Position a rack in the center of the oven and heat the oven to 375˚F. Put the butter in a 10- to 12-inch cast iron skillet and put it in the oven to melt the butter while the oven is heating.

Meanwhile, stir or whisk the flour, sugar, baking powder, and salt in a medium bowl until well combined. Add the milk and stir or whisk until combined; a few small lumps are okay.

When the butter is fully melted, take the baking dish out of the oven and pour the batter over the melted butter; do not mix.

Scatter the peaches over the batter, favoring the middle of the dish more than the edges; do not mix them in.

Bake until the top is a rich golden-brown, 30-45 minutes. Serve warm with a scoop of DLM Madagascar Vanilla Gelato.

If I have a No. 8 cast iron frying pan, instead of a 10 inch cast iron pan, would a 10 stainless steel pan require more or less oven time, without burning the
cobbler?

This has been far my most favorite skillet Peach cobbler. I stayed right with all the required ingredients and used fresh peaches. It has been a hit.
