Cherry and Cucumber Salad

INGREDIENTS

  • 1 cup thick Greek yogurt
  • 1 garlic clove, grated
  • 2 tsp lemon zest
  • Salt and pepper to taste
  • 5 mini cucumbers
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp Vera Jane's Extra-Virgin Olive Oil
  • 2 cups ripe cherries, pitted
  • Handful of fresh herbs like parsley or mint, minced
  • Aleppo pepper or crushed pink peppercorns for garnish

INSTRUCTIONS

In a small bowl, mix the yogurt with the garlic and lemon zest; season with salt and pepper to taste.

Using a mandoline or a sharp knife, slice the cucumbers lengthwise into 1/8-inch slabs. In another bowl, whisk the lemon juice and olive oil. Add the slices of cucumbers and season to taste with additional salt and pepper.

When ready to serve, smear the seasoned yogurt on individual plates or a platter making a base for the salad. Place the slices of cucumber in loose curls on top of yogurt. Scatter fresh cherries on top; garnish with the fresh herbs and the pepper or pink peppercorns.
