Pattypan, Tomato & Mushroom Sauté

INGREDIENTS

  • 2 Tbsp DLM Extra-Virgin Olive Oil
  • 3 pattypan squash, cut into wedges
  • 1 cup diced tomatoes
  • ½ lb oyster mushrooms, diced
  • ¼ green onions, chopped
  • Salt and pepper to taste
  • 2 Tbsp fresh parsley, chopped

INSTRUCTIONS

Heat olive oil on medium-low in a large sauté pan. Add squash and sauté until tender, about 5 minutes. Add tomatoes and continue to cook, about 4 more minutes.

Raise the heat to medium-high and toss in the oyster mushrooms and green onions until just wilted. Season to taste generously with salt and pepper.

Remove from heat and top with parsley.
