Poblano Breakfast Potatoes

INGREDIENTS

  • 1 20-oz package Simply Potato Diced Potatoes with Onion
  • 1 poblano pepper
  • 4 garlic cloves, peeled
  • 2 Tbsp DLM Pure Olive Oil
  • 1 tsp salt
  • Freshly cracked black pepper
  • ½ tsp hot chili powder

INSTRUCTIONS

Preheat oven to 425°F.

Remove the seeds from the poblano and dice pepper into small bite size chunks.

In a mixing bowl, combine the potatoes, poblano, garlic cloves, olive oil, salt, black pepper, and hot chili powder.

Spread the mixture into an even layer on a baking sheet. Bake for 20-30 minutes, stirring them at least once while they are baking. Take a final taste for seasoning. Serve immediately.
