Classic pesto is a favorite, but you can get creative by changing up the herbs, greens, and nuts and also by adding peppers, sundried tomatoes, and more! The variations are as numerous as cuisines. Nicoletta was born and raised in Bari, Puglia; the heel of Italy. She and her husband, Giacomo, moved to the US in 2009. The couple enjoys preparing authentic Italian meals for their three bilingual children. Nicoletta owns a business called "When I am in Rome", in which she teaches Italian, provides travel planning services, and cooking classes. Nicoletta is excited to share her Italian culture, and beautiful food and language with our Culinary Center students.
